- 2 cups long-grain rice

- Salt and pepper to taste

1. Rinse the rice under cold water until the water runs clear. Set aside.

2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and minced garlic. Sauté until the onions turn translucent.

3. Stir in the diced tomatoes, red bell pepper, scotch bonnet pepper, and mixed vegetables. Cook for about 5 minutes until the vegetables soften.
